Ingredients

1 handful dried deseeded rosehips

1 handful fresh (or dried) orange peel

1 handful oatstraw

2 tablespoons freshly grated ginger

1 tablespoon cinnamon chips

Approximately 3 cups apple cider vinegar

½ cup honey or more to taste
Directions
Grind rosehips and oatstraw in a coffee grinder for about 15 seconds—just enough to coarsely chop, not powder. Add dried orange peel if using; if fresh, mince it with a knife.
Combine all the herbs, including cinnamon and ginger, in a quart jar. Add apple cider vinegar and stir well.
- Cover the jar with a glass or plastic lid. If using a metal lid, place parchment paper between the vinegar and lid to prevent corrosion.
Shake well. Let this mixture sit in a cool, dark place for 2 weeks. Shake it daily.
- After two weeks, strain the vinegar and set it aside. Stir in honey and mix well.
- Keep your oxymel in the refrigerator, where it can stay fresh for up to 6 months.
Recipe Note
For a refreshing at-home mocktail, mix 1–2 tablespoons of this oxymel with 8 ounces of sparkling water. Top it off with a fresh orange slice for garnish. Sip and enjoy!
