Organic Way
Ingredients

1 cup water

2 Tablespoon freshly grated ginger

2 Tablespoon lemon juice about 1/2 lemon

3 Tablespoon honey or sweetener of choice

1/2 teaspoons grated lemon zest from about 1/4 lemon

1/4 teaspoons ground cinnamon

1/8 teaspoons ground cayenne pepper (optional)
Directions
Mince or grate the ginger. Juice and zest the lemon.
Add all the syrup ingredients to a small sauce pan. Bring to a simmer over medium-low heat.
Simmer on low heat, stirring occasionally, for about 15-20 minutes, or until reduced by about half.
Strain the liquid through a fine mesh strainer. Allow the syrup to cool.
To make ginger beer: Fill a glass halfway with ice. Add 8 ounces of seltzer to the glass. Stir 1-3 Tablespoons of the syrup into the mixture. Garnish with a slice of lemon.
To make ginger tea: Stir 1-3 Tablespoons into a mug filled with with 8 oz. hot water. Garnish with a slice of lemon.
Recipe Note
To store the syrup: Transfer the syrup to a glass container. Cover and store in the refrigerator for up to 2 weeks.
